• | 2 oz. Reposado Tequila |
• | Mezcal in an atomizer |
• | 1/4 oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed |
• | 1/4 oz. The Perfect Purée Ginger Puree, thawed |
• | 1/2 oz. The Perfect Purée Lemon Zest, thawed |
• | 1/2 oz. fresh lemon juice |
• | 1 egg white |
• | 3 dashes Fee Brothers West Indian Orange Bitters |
• | Candied ginger (garnish) |
• | Candied lemon rind (garnish) |
Method: | |
Combine all ingredients into a shaker and give it a hard, dry shake. Add ice and shake hard. Spray chilled coupe with mezcal. Double strain shaken mixture in a coupe. Let sit until head forms, garnish with candied ginger or candied lemon rind. Serve. | |
