Las Vegas Brand Ambassador Jeanine Varilla has more that 12 years’ experience in the food and beverage industry with roles in the front and back of the house. Originally from Chicago, Nina worked as a cook at a French restaurant in upstate New York before moving to Las Vegas. There she worked for the first French chef to arrive in Las Vegas, Andre Rochat. His Alize, a haute French destination at the top of the Palms, set the tone for the city’s fine dining scene. From the desert, Nina traveled to remote Alaska to work at a hunting and fishing lodge on the Tsiu River. Nina hosted pop-up dinners in Los Angeles then returned to Vegas to work at The NoMad Hotel. At NoMad, she transitioned to the bar side, learning the craft through NoMad’s award-winning cocktail program. Nina has also worked at Majordomo. As the Perfect Purée’s brand ambassador in a city full of cutting-edge concepts, Nina is busy connecting with hospitality professionals and exploring the innovative food and beverage scene in Las Vegas.
