Tau foo fah (Malaysian soybean pudding)

Ingredients for Tau foo fah:

  • 1 tbsp. The Perfect Purée Sweet Ginger, thawed
  • 2 pandan leaf, cut into 2-inch pieces
  • 1 cup gula melaka (can substitute with muscovado or jaggery)
  • ½ cup water
  • 1 organic silken soft tofu (bean curd)
  • fresh ginger, peeled and sliced

Method for Tau foo fah:

  1. Add water, pandan leaves and gula melaka to a small saucepan. Bring to a slow simmer on medium heat and then place on low heat until liquid is slightly syrupy.
  2. Add The Perfect Purée Sweet Ginger to taste and remove from heat.
  3. Portion soft tofu and drain lightly with the palm of your hand.
  4. Place tofu, sliced ginger pieces and ginger syrup when plating.
  5. Serve immediately.
