| • | 8 oz. The Perfect Purée Red Raspberry Puree, thawed |
| • | 2 oz. Framboise or raspberry liqueur |
| • | 1 tsp. sugar |
| • | 4 firm-ripe pears |
| • | 2 tbsp. finely chopped raw pistachio nuts |
| Method: | |
| 1. | In a bowl stir together Red Raspberry puree, liqueur, and sugar; set aside. |
| 2. | Peel pears. Core pears from the bottom, leaving the stem intact. Cut a thin slice from the bottom of each pear so pears stand upright. Arrange pears standing upright in a large saucepan; pour raspberry mixture over pears. |
| 3. | Bring pear mixture to boiling; reduce heat. Simmer, covered, for 10 to 15 minutes, or until pears are tender. Remove pears to a platter; cover and chill. |
| 4. | Transfer cooking liquid to a smaller saucepan; boil until thickened, about 10 to 12 minutes. Cool. |
| Serving Suggestion: | |
| Spoon some of the sauce on each dessert plate; place pears upright on sauce. Drizzle additional sauce over each pear and sprinkle with pistachio nuts. | |
