Ingredients for Dark & Fizzy:
- 2 oz. Lyre’s Dark Cane Spirit
- 1 oz. The Perfect Purée Passion Fruit Concentrate, thawed
- ¼ oz. calamansi juice
- ¾ oz. lime juice
- 1 oz. rich simple syrup
- 1 egg white
- Topped with Fever Tree Club Soda
Method for Dark & Fizzy:
- Add all ingredients to a mixing tin.
- Dry shake to emulsify the contents with the egg white.
- Add ice to the shaker and hard shake till you feel the shaker begin to frost.
- Take a chilled brandy snifter and prime it by pouring 2 ounces of Fever Tree Club Soda. (When you use a higher quality mixer, you get better results when crafting cocktails.)
- Pour ingredients into the snifter over the club soda.
- Add more club soda if needed. This variation does not call for a towering head of foam.
- Add 3 dashes of aromatic bitters. You can get fancy and create a swirly design.
- Garnish with a caramelized or candied lime wheel.
