Ingredients for Mango Sorbet:
- 3 cups The Perfect Purée Mango Puree, thawed
- 1 ounce lime juice
- ½ cup granulated sugar
- 2 ounces water
Method for Mango Sorbet:
- Combine all ingredients into a large bowl and whisk to combine. Pour mixture into ice cream machine and churn for 30 minutes. Once lightly churned, remove from the ice cream maker and place into a freezer-ready container.
Ingredients for Bacon Tajin:
- ¼ cup minced bacon
- ½ cup brown sugar
- 1 teaspoon cayenne pepper
- ½ teaspoon ground cumin
- ½ teaspoon lime zest
- ½ teaspoon ground guajillo powder
Method for Bacon Tajin:
- Place the bacon in a small pan and, over low heat, cook until crisp. Remove, drain, and pad dry. Place into a bowl along with the brown sugar, cayenne pepper, lime zest, and guajillo powder and toss to combine.
Ingredients for Strawberry Rose Water:
- ½ cup diced strawberries
- ¼ cup rose water
Method for Strawberry Rose Water:
- Place ingredients in a food processor and puree together. Strain through a coffee filter and reserve.
Finish:
- Place a small amount of the bacon tajin on the plate, followed by the mango sorbet, and garnish with fresh lime zest and strawberry rose water.
