The Emerald City 1 drink By Chuck Starzenski, Bartender, Luma Bar & Eatery

Ingredients for The Emerald City:

• 2 oz. Charbay Clear Vodka
• ¼ oz. Strega Liqueur
• ½ oz. The Perfect Purée Kiwi puree, thawed
• ½ oz. acid adjusted pineapple juice
• ¾ oz. pistachio orgeat

Ingredients for Acid Adjusted Pineapple Juice:

• 100 ml. pineapple juice
• 4 g. citric acid

Method for Acid Adjusted Pineapple Juice: Combine and mix all ingredients.

Ingredients for Pistachio Orgeat:

• pistachios
• water
• sugar

Method for Pistachio Orgeat:

1. Peel and rinse desired number of pistachios then soak them overnight in 1.5 times their weight in water.
2. Blend the hydrated nuts with the soaking liquid and strain the mixture through a nut milk bag; discard the solids.
3. Mix the pistachio milk with a 1:1 sugar ratio by weight.

Method for The Emerald City:

1. Combine all of the ingredients and shake over ice.
2. Strain into a rocks glass filled with pebble ice.
