Ingredients for The Emerald City:
- 2 oz. Charbay Clear Vodka
- ¼ oz. Strega Liqueur
- ½ oz. The Perfect Purée Kiwi puree, thawed
- ½ oz. acid adjusted pineapple juice
- ¾ oz. pistachio orgeat
Ingredients for Acid Adjusted Pineapple Juice:
- 100 ml. pineapple juice
- 4 g. citric acid
Method for Acid Adjusted Pineapple Juice: Combine and mix all ingredients.
Ingredients for Pistachio Orgeat:
- pistachios
- water
- sugar
Method for Pistachio Orgeat:
- Peel and rinse desired number of pistachios then soak them overnight in 1.5 times their weight in water.
- Blend the hydrated nuts with the soaking liquid and strain the mixture through a nut milk bag; discard the solids.
- Mix the pistachio milk with a 1:1 sugar ratio by weight.
Method for The Emerald City:
- Combine all of the ingredients and shake over ice.
- Strain into a rocks glass filled with pebble ice.
