La Pera1 drink Alex Greene, Bartender / Shangri-la |
Ingredients for La Pera:
- 1 ½ oz tequila (reposado recommended)
- ½ oz St. Elizabeth’s Allspice Dram
- 1 oz fresh lime juice
- 1 oz sage agave syrup
- 2 dashes Angostura Bitters
Ingredients for Sage Agave Syrup:
- 30 oz The Perfect Purée of Napa Valley Pear puree, thawed
- 1 ½ cups agave
- 1 cup water
- ½ bunch sage
- 1 tsp salt
Method for La Pera:
- Rim a double rocks glass with cinnamon, salt and sugar mix. Fill with fresh ice.
- Combine ingredients, shake and pour into glass.
- Garnish with pear slice poached in a pea flower simple syrup, sliced and dehydrated.
Method for Sage Agave Syrup:
- Combine sage and agave in small saucepan. Bring to a boil and simmer briefly.
- Remove from heat. Take sage leaves out of the mixture, add Pear puree and blend.
- Cool and strain.
