Sweet & Spicy Tamarind Sauce

Ingredients for Sweet & Spicy Tamarind Sauce:

• 4 ½ cups The Perfect Pureé Tamarind Puree, thawed
• 1 cup oil
• 2 ½ cups chopped garlic
• 3 ½ cups chopped shallots
• 3 ½ cups chopped cilantro
• 4 ½ quarts water
• 3 ½ cups brown sugar or palm sugar
• 1 ½ cups fish sauce
• ½ cup chili flakes
• 3 ½ cups water
• 2 ½ cups tapioca starch

Method for Sweet & Spicy Tamarind Sauce:

1. Combine tapioca and water in a small bowl to create a slurry.
2. In medium skillet, add oil and heat to medium. Add garlic and shallot and fry until brown.
3. Add water, brown or palm sugar, whisk and cook until dissolved (about 1-2 minutes).
4. Add chopped cilantro stems and stir well. Cook for 1 minute until fragrant.
5. Add fish sauce, chili flakes and stir for 1 minute.
6. Add Tamarind puree, stir until homogenized and warmed through.
7. Whisk in slurry, while quickly whisking, turn heat to low and whisk until sauce thickens.
8. Adjust thickness with water and adjust flavor with sugar or fish sauce.
