Ingredients for Passion Fruit Glass:

• 45 g. The Perfect Purée Passion Fruit Concentrate, thawed
• 45 g. light corn syrup
• 30 g. water
• 150 g. sugar

Method for Passion Fruit Glass:

Combine all ingredients into a medium sauce pot and cook on medium heat until sugar mixture reaches to 295F or hard crack stage. Carefully pour hot sugar onto a sheet tray with a silicone mat and cool thoroughly. Once completely cool, break sugar into pieces using the back of a metal spoon and store in an airtight container at room temperature.
