Ingredients for Summer Solstice:
• 1 ½ oz. High Wire Distilling Hat Trick Gin
• 1 oz. The Perfect Purée Lychee Puree, thawed
• 1 oz. watermelon oleo syrup (recipe below)
• ½ oz. Aperol
• ½ oz. lemon juice
• 4 oz. coconut ice (freeze coconut water in an ice mold)
• 2 oz. crushed ice (optional)
• pickled watermelon rind (optional / garnish)
Ingredients for Watermelon Oleo Syrup:
• 12 oz. watermelon, cut into small chunks
• 12 oz. sugar
• 2 limes (peels only)
Method for Watermelon Oleo Syrup:
Combine watermelon chunks, sugar, and peels of 2 limes in a resealable plastic bag. Massage fruit, sugar, and peels in a bag and let it sit at room temperature for 6 – 8 hours. Before straining, massage ingredients one more time to make sure they are combined. Strain syrup to remove lime peel and any leftover chunks. Refrigerate for at least 2 weeks.
Method for Summer Solstice:
Add all ingredients except garnish to a blender. Blend at high speed until smooth. Add optional crushed ice if you like a thicker consistency or more dilution. Pour into your glass of choice, add garnish (optional), and enjoy!
If you don’t have a blender, add all ingredients except coconut ice and garnish to a shaker tin. Shake (with regular ice) for 10-15 seconds. Strain into a rocks glass, add ice, and top with coconut ice. Add the garnish (optional) and enjoy!
