Ingredients for The Immortal Ceviche:
• ¾ lb. fresh snapper or shrimp, diced (sushi grade or lightly blanched)
• 3 tbsp. The Perfect Purée Passion Fruit Concentrate, thawed
• 1 tbsp. fresh lime juice
• ½ tsp. sea salt
• ½ cup. Natavo™ IQF Diced Avocado
• ¼ cup. diced mango or pineapple
• ¼ cup. diced red onion
• 1 tbsp. chopped cilantro
• 1 tsp. olive oil (optional for gloss)
Method for The Immortal Ceviche:
Thaw Natavo™ IQF Diced Avocado until tender. In a glass bowl, toss the seafood with The Perfect Purée Passion Fruit, lime juice, and salt. Let it sit for about 10 to 15 minutes until it firms up and turns opaque. Gently fold in the Natavo™ IQF Diced Avocado, mango, red onion, and cilantro. Mix carefully to keep the avocado pieces intact. Spoon into chilled coupe or martini glasses. Drizzle a touch of olive oil on top and garnish with micro cilantro or edible flowers.
