Bright Camu Camu Vinaigrette with Hawaiian & Japanese Inspiration

Kombu-jime–cured opah meets bright Camu Camu vinaigrette, aromatic shiso oil and a modern interpretation of Hawaiian chile water in this runner-up dish from the Sweet & Savory Challenge with StarChefs. Drawing on Hawaiian and Japanese influences, the plate is focused and vibrant, with the clean acidity and consistency of The Perfect Purée Camu Camu giving the dish its structure and lift. Created by chef Jacob Whitson, the composition reflects a restrained, precise approach that lets each element shine.
