Risotto alle Campesante

Components for Risotto alle Campesante:

• aged carnaroli rice
• lime zest
• mascarpone
• Atlantic Scallops
• Passion Fruit Infusion Oil
• Passion Fruit Sauce

Ingredients for Passion Fruit Infusion Oil:

• 300 ml. grapeseed oil
• 150 ml. The Perfect Purée Passion Fruit Concentrate, thawed
• 1 g. salt
• 1 pinch sugar

Ingredients for Passion Fruit Sauce:

• 300 ml. The Perfect Purée Passion Fruit Concentrate, thawed
• 150 ml. agua
• 2 ea passion fruit fresh juice (save seeds)
• 1 pinch salt
• 1 pinch sugar

Method for Risotto alle Campesante:

Simmer for no more than 1 hour up to 50″F
