Chai Cardamom Loaf Cake

Ingredients for Loaf Cake:
• 150 g. eggs
• 40 g. yolks
• 200 g. sugar
• 35 g. The Perfect Purée Chai Cardamom Syrup
• 5 g. vanilla extract
• pinch of salt
• 175 g. flour
• 1 tsp. chai spice
• 7 g. baking powder
• 120 g. heavy cream
• 80 g. butter, melted
• 35 g. oil

Ingredients for Cake Syrup:
• 120 g. water
• 100 g. sugar
• 65 g. The Perfect Purée Chai Cardamom Syrup

Method for Loaf Cake:
1. In a mixer bowl, whip eggs, yolks, sugar, syrup, and vanilla until light and fluffy and the yolks reach ribbon stage.
2. Add salt, flour, baking powder, and chai spice. Mix on low speed until well combined.
3. On low speed, stream in heavy cream until well combined.
4. On low speed, stream in oil and melted butter until well combined.
5. Line a loaf pan with parchment paper and add batter.
6. Bake at 350°F for 25–30 minutes or until a cake tester comes out clean.
7. Let sit in the tin for 5 minutes after removing from the oven.
8. Remove from tin and brush tops and sides with cake syrup while the cake is still warm.

Method for Cake Syrup:
In a pot, bring all ingredients to a boil. Set aside to cool.
