Nashville Brand Ambassador for The Perfect Purée of Napa Valley

Bartender, Omni Nashville

Olivia Tovar is a bartender at the Omni Nashville and the owner of a mobile bartending service. Olivia has crisscrossed the country working diverse roles in the bar and restaurant industry. Originally from Coarsegold, California, she went to college in Boston and worked for the Glynn Hospitality Group’s iconic Black Rose, first as a bartender then as a manager. She parlayed her management skills into Sweetgreen, facilitating the company’s rapid expansion in Boston.

When Northeast winters caught up with her California soul, Olivia transferred to become the assistant general manager of Sweetgreen Coconut Grove in Miami. She also helped the company open new locations in that city. “It was definitely the kind of company I wanted to work for and it was a different restaurant experience than what I started with,” Olivia says.

While she was living in Miami, Olivia visited her sister and brother-in-law in Clarksville, Tennessee, and fell in love with the laid-back albeit landlocked lifestyle. Her parents and six other siblings (she’s one of eight) have since moved to the area. As a relative newcomer to Nashville, Olivia welcomes the opportunity to represent The Perfect Purée. “I’ve used the product pretty often in my work so it felt like a natural fit. It’s a great way to see the city and experience the Nashville scene,” she says. “I also enjoy the fact that I get to visit local businesses.”

Olivia learned about The Perfect Purée from Glynn Hospitality, which she credits with developing her bartending and management skills. “They gave us a lot of freedom as far as creativity and let us do something different,” she says. “A lot of places do not do that, especially in corporate.”

At the Omni, Olivia has returned to her roots. “Bartending was kind of my first love,” she says. She’s hoping to bring The Perfect Purée to the Omni’s bar program. “I love Red Jalapeño, [Sweet] Hibiscus is a really good one and Mango is always a crowd favorite,” she says.
