“My name’s Raymond Morales, and I’ve been working in the food industry for 16 years now. These are some dishes and flavors I truly love and are nostalgic to me for many reasons. Growing up in Los Angeles, Mexican mango paletas are very common and the pate de fruit I made is a modern French-inspired interpretation. Key lime pie, strawberry rhubarb pie, and cheesecake have been some of my favorite desserts since I was a child, so I decided to do my own modern take on them.
