Japanese Inspired Desserts

A Taste of Prosperity

Whimsical and layered in both flavor and meaning, Ellie Estrada’s white peach dessert draws inspiration from the Japanese folk legend Momotaro and earned runner-up honors in our Sweet & Savory Challenge with StarChefs. Fragrant white peach and jasmine ice cream meet tangy yogurt mousse beneath a delicate cocoa butter shell, surrounded by peach mochi, jasmine jelly, and shimmering kanten. Rooted in the cultural symbolism of white peaches as emblems of good fortune, the dish comes to life with The Perfect Purée White Peach.

“I’m drawn to desserts that feel playful and surprising, using natural ingredients to create vivid color, bright acidity, and a sense of joy on the plate.”
