What’s the Difference Between a Puree, Concentrate, Zest and Blend?

Our Purees are made from fruit that has been pulped and mashed into a rich, full-bodied texture. Puréed fruits and vegetables have long been produced by hand by classically trained chefs as a staple kitchen ingredient. Many professional kitchens and bars simply cannot afford the added time and cost associated with hand-prepared purees. Often produce prices, availability, and quality fluctuations hinder restaurants from providing a complete array of handmade purées year-round.

Fruit concentrates come from fruit juice that has had the water removed during processing. Concentrates are thinner in consistency than purées and also typically higher in sugars. Depending on the flavor, a concentrate can be 200 – 250% stronger in flavor than its purée equivalent.

The Perfect Purée offers three ready to use zests: Lemon Zest, Orange Zest, and Lime Zest. After removing the bitter pith from the fruit and finely chopping just the outer peel, we combine our zests with Vegan sugar — a true game changer for chefs and bakers. Zesting by hand is rigorous, taking extensive time and labor. Using The Perfect Purée is 3 to 4 times more economical than hand zesting fresh produce.
