Combine all, hard shake. Strain in a coupe and garnish with Spiced Pear Foam. | *Ingredients for the Spiced Pear Foam: | • | 4 cups The Perfect Purée Pear Puree, thawed | • | 8 oz. St. Elizabeth Allspice Dram | • | 4 oz. Turbinado/Demerara simple syrup | • | 2 gelatin sheets | Method for the Spiced Pear Foam: | Heat the puree, dram, and syrup to just below a boil. Whip in gelatin sheets and cool. Put into ISI canister and charge with NO2. Use within a week. |
