1 1/2 oz. Charbay Blood Orange Vodka
Spiced Pear Foam*
1/2 oz. Burly Beverages Pineapple – Nutmeg Shrub Syrup
1/2 oz. Licor 43
1 oz. lemon juice
Combine all, hard shake. Strain in a coupe and garnish with Spiced Pear Foam.

*Ingredients for the Spiced Pear Foam:
4 cups The Perfect Purée Pear Puree, thawed
8 oz. St. Elizabeth Allspice Dram
4 oz. Turbinado/Demerara simple syrup
2 gelatin sheets
Method for the Spiced Pear Foam:
Heat the puree, dram, and syrup to just below a boil. Whip in gelatin sheets and cool. Put into ISI canister and charge with NO2. Use within a week.
