Ingredients for Banana Sticky Toffee:
• 5.2 oz. butter
• 1 lb. brown sugar
• ½ oz. vanilla
• 4 eggs
• 3 oz. molasses
• 3.8 oz. dark corn syrup
• 14.2 oz. all-purpose flour
• 1 tbsp. baking powder
• 2 tsp. baking soda
• 2 cups The Perfect Purée Banana Puree, thawed
Chef’s serving suggestion: Finish with bourbon caramel sauce and brûléed bananas.
Method for Banana Sticky Toffee:
Preheat oven to 325°F. Sift flour, baking powder, and baking soda; set aside. Cream butter and brown sugar until light and fluffy. Add eggs and vanilla; mix until fully incorporated. Add sifted dry ingredients and mix to combine. Add molasses, corn syrup, and banana puree; mix until smooth. Pour into prepared pan(s) and bake until set.
