Carmelized Mai tai1 drink |
| • | 1 oz. light rum |
| • | 1 1/2 oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed |
| • | 1/4 oz. The Perfect Purée Meyer Lemon Concentrate, thawed |
| • | 1/2 oz. orgeat syrup |
| • | Li Hing Mui powder, for rimmer (optional) |

| 1. | Rum rim of glass with Meyer Lemon Concentrate, dip into Li Hing Mui powder. Set aside. Combine all ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Pour into a martini glass and garnish with a grilled pineapple wedge. Serve. |
