Carmelized Mai tai

1 drink

    • 1 oz. light rum
    • 1 1/2 oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed
    • 1/4 oz. The Perfect Purée Meyer Lemon Concentrate, thawed
    • 1/2 oz. orgeat syrup
    • Li Hing Mui powder, for rimmer (optional)
Method:
1. Rum rim of glass with Meyer Lemon Concentrate, dip into Li Hing Mui powder. Set aside. Combine all ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Pour into a martini glass and garnish with a grilled pineapple wedge. Serve.
