Carmelized Pineapple Mai Tai

    • 1 oz. Diplomatico light rum
    • 1 oz. Diplomatico dark rum
    • 1 oz. Gran Gala
    • 3 1/2 oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed
    • 1/2 oz. almond syrup
    • 1/2 oz. lime juice
    • 1/2 oz. original Havana cane syrup

Method:
1. Combine all ingredients except dark rum, shake and strain over fresh ice. Float the dark rum and garnish with pineapple, mint and pineapple leaf.
