Carmelized Pineapple Mojito

Ingredients for Carmelized Pineapple Mojito:
• 2 oz. dark rum
• 3/4 oz. The Perfect Purée Spiced Carmelized Pineapple Syrup
• 1/2 oz. fresh lime juice
• 6-8 fresh mint leaves
• splash of club soda

Ingredients for Spiced Carmelized Pineapple Syrup:
• 2 cups The Perfect Purée Carmelized Pineapple Concentrate, thawed
• 1 cup water
• 2 cups sugar
• 2 grams of allspice

Method for Spiced Carmelized Pineapple Syrup:
1. Add all ingredients to a medium pot and bring to a slight boil, stirring constantly.
2. Let cool. Flavored simple syrup will keep in the refrigerator for 1-2 weeks.

Method for Carmelized Pineapple Mojito:
1. In a shaker, muddle mint leaves with lime juice and simple syrup to release mint flavor.
2. Add rum and Spiced Carmelized Pineapple Syrup to shaker.
3. Fill shaker with ice and shake vigorously for 15 seconds.
4. Strain mixture into a glass filled with ice.
5. Top with club soda and gently stir to combine.
6. Garnish with a sprig of mint and a pineapple wedge.
