| • | 32 oz. The Perfect Purée Chipotle Sour blend, thawed |
| • | 1 1/3 cup Worcestershire sauce |
| • | 1 1/3 cup white vinegar |
| • | 2.5 Tbsp. granulated garlic |
| • | 1 tsp. ground cumin |
| • | 2.5 Tbsp. black pepper |
| • | 2 cup brown sugar |
| • | 1 1/4 cup maple syrup |
| • | 3 1/3 cup yellow mustard |
| • | 1/3 cup chipotles in adobo sauce |
| • | 5 cup canola oil |
| • | 27 – 28 pounds boneless pork shoulder |
| • | salt/pepper to taste |
| Method: | |
| 1. | Place pork shoulders in a crock pot on low for 10-12 hours with salt and 1/4 cup water. |
| 2. | Cook until meat is tender and separates easily. |
| 3. | Shred the pork and set aside. |
| 4. | In a pot, combine all ingredients above except for yellow mustard, chipotles, Chipotle Sour and oil; warm the mix until the brown sugar has melted. |
| 5. | Pour warmed mixture in blender with yellow mustard, chipotles and Chipotle Sour. Blend until well combined. |
| 6. | Once well combined, slowly pour the canola oil while blender is on. |
| 7. | Serve the BBQ sauce with the pulled pork immediately. Alternatively, you can store this sauce in the refrigerator for 2-3 weeks or 6-8 weeks in the freezer. |
