Citrus Suspense

1. Place water in blender turn on low. Incorporate sodium alginate for 30 seconds. Pour into deep glass bowl let the bubbles work their way out over night covered. Mix Blood Orange Concentrate and blood orange liqueur. Sift and whisk calcium lactate gluconate. Spoon up 1/2 tbsp. of blood orange hold over sodium alginate letting bottom of spoon touch bath and flip spoon. Agitate bath periodically while blood orange sets for 2 minutes. Scoop encapsulated blood orange with slotted spoon and rinse in room temperature water bath. Save extra capsule in blood orange juice. Sour mix makes 2 drinks. Combine sake sour ingredients in shaker and shake well. Rim flute shooter with pink salt. Pour sour into shooter. Add encapsulated blood orange last
Sake Sour Mix:
    • 4 oz. Black and Gold Sake
    • 2 oz. The Perfect Purée Yuzu Luxe Sour Blend,  thawed
    • 1 oz. agave syrup
    • 4 drops sesame oil
    • ground Himalayan salt (rimmer)
Blood Orange Suspension:
    • 4 2/5 oz. The Perfect Purée Blood Orange Concentrate,  thawed
    • 35 oz. distilled water
    • 5 g sodium alginate
    • 4 2/5 oz. Solerno Blood Orange Liqueur
    • 5 g calcium lactate gluconate
