    • 2 oz. Lyre’s Dark Cane Spirit
    • 1 oz. The Perfect Purée Passion Fruit Concentrate, thawed
    • 1/4 oz. calamansi juice
    • 3/4 oz. lime juice
    • 1 oz. rich simple syrup
    • 1 egg white
    • Topped with Fever Tree Club Soda
Method:
1. Add all ingredients to a mixing tin.
2. Dry shake to emulsify the contents with the egg white.
3. Add ice to the shaker and hard shake till you feel the shaker begin to frost.
4. Take a chilled brandy snifter and prime it by pouring 2 ounces of Fever Tree Club Soda. (When you use a higher quality mixer you get better results when crafting cocktails.)
5. Pour ingredients into the snifter over the club soda.
6. Add more club soda if needed. This variation does not call for a towering head of foam.
7. Add 3 dashes of aromatic bitters. You can get fancy and create a swirly design.
8. Garnish with a caramelized or candied lime wheel.
