| • | 1 oz. The Perfect Purée Coconut Puree, thawed |
| • | 3/4 oz. lime juice |
| • | 3/4 oz. ancho reyes |
| • | 1/2 egg white |
| • | 1 1/2 oz. soda (top) |

| 1. | Combine all ingredients in a tin without ice. Dry shake for 15 seconds. Add ice and shake for another 15 seconds. Double strain into a tall Collins glass over 3 cubes of ice. Top off with soda water. Garnish with Espellette and tapioca pearls. |
