• | 3 1/4 cups dry red wine |
• | 1 cup spiced rum |
• | 1:1 ratio of 1/4 cup water and 1/4 cup The Perfect Purée Mandarin/Tangerine Concentrate, thawed |
• | 1 cup honey, or to taste |
• | 1 tbsp. cardamom pods |
• | 1 tbsp. allspice berries |
• | 2 tsp. whole cloves |
• | Peel of one orange |
• | 2 4-inch pieces of cinnamon |
• | 1-inch piece dried ginger |

Method: |
1. | Combine all ingredients in a saucepan over medium heat and simmer 1 to 2 hours. Do not boil. |
2. | Strain into a serving jug. |
3. | Serve warm garnished with slices of orange and star anise pods. |
