Grilled Beef Brochette with Curried Green Apple Sauce

    • 3 lbs. beef sirloin steak or boned, skinless chicken breasts, cut into 3-inch strips
    • 12 oz. The Perfect Purée Green Apple Puree, thawed
    • 2 oz. The Perfect Purée Ginger Puree, thawed
    • Bamboo skewers soaked in water for 3 hours
    • 6 oz. peanut butter
    • 4 – 6 tsp. curry powder
    • 2 oz. fresh lime juice
    • Optional: 1 tbsp. bottled hot pepper sauce to taste
1. Preheat broiler or grill. Thread meat onto skewers, ribbon like. Place on lightly oiled broiler pan or grill. Broil or grill 5-8 minutes, turning once.
2. In food processor, place remaining ingredients, cover and process until smooth.
Flavor Twists:
This sauce is also excellent with The Perfect Purée White Peach, Apricot, or Mango.
Serving Suggestion:
Serve skewered beef or chicken with small bowls of sauce for dipping. If serving as a main course, serve rice.
