| For the Prawns: | |
| • | 16 medium prawns |
| • | Salt & Chili powder, to taste |
| • | Lime juice |
| White Peach and Roasted Jalapeno Salsa: | |
| • | 1 cup The Perfect Purée White Peach Puree, thawed |
| • | 1/4 jalapeno, finely minced |
| • | 1/4 cup jicama, finely diced |
| • | 2 tbsp. onion, finely diced |
| • | 4 tbsp. cilantro, chopped |
| • | 1 tbsp lime juice |
| • | Salt and pepper, to taste |
| Method: | |
| 1. | Mix all ingredients for the salsa, and let sit for 15 minutes to combine the flavors. |
| 2. | Season the prawns with salt, lime and chili powder and grill over a hot fire. |
| 3. | Serve the warm prawns with the cool salsa, and extra lime wedges. |
