Grilled Prawn Cocktail with White Peach and Roasted Jalapeno Salad

For the Prawns:
    • 16 medium prawns
    • Salt & Chili powder, to taste
    • Lime juice
White Peach and Roasted Jalapeno Salsa:
    • 1 cup The Perfect Purée White Peach Puree,  thawed
    • 1/4 jalapeno, finely minced
    • 1/4 cup jicama, finely diced
    • 2 tbsp. onion, finely diced
    • 4 tbsp. cilantro, chopped
    • 1 tbsp lime juice
    • Salt and pepper, to taste
Method:
1. Mix all ingredients for the salsa, and let sit for 15 minutes to combine the flavors.
2. Season the prawns with salt, lime and chili powder and grill over a hot fire.
3. Serve the warm prawns with the cool salsa, and extra lime wedges.
