For the drink:
    • 1 1/2 oz. Weed Cellars Bourbon
    • 3/4 oz. The Perfect Purée Peach Ginger blend, thawed
    • 1 oz. Peach Shrub
    • 5 drops Palisade peach bitters
Method for the drink:
1. Combine all ingredients with ice, stir and strain over ice sphere into bucket glass. Garnish with fresh peach slices
For the Peach Shrub:
    • 3 peaches
    • sugar
    • 1/2 cup champagne vinegar
Method for the Peach Shrub:
1. Remove the pit from 3 organic very ripe peaches and weigh them with a scale.
2. Muddle peaches with equal amount by weight sugar.
3. Seal in container overnight so the sugar and peaches make a syrup.
4. Stir well and pour champagne vinegar over the peach sugar mixture.
5. Mash the remaining peach sugar in sieve to get out all the liquid. Fine strain the vinegar/peach syrup again to remove particles that may have slipped through. Allow to rest sealed in the refrigerator for at least 24 hours to incorporate flavors.
