Jeow SomLiza Cheng, The Perfect Purée |
Ingredients for Jeow Som:
• ½ cup The Perfect Pureé Key Lime Concentrate, thawed
• ½ cup The Perfect Pureé Lime Zest, thawed
• 90 garlic cloves
• 133 thai chilis
• 9 tsp. salt
• 4 ½ tsp. MSG
• 2 cups sugar
• 9 cups fish sauce
• 4 ½ cups chopped cilantro
Method for Jeow Som:
1. Add garlic, Thai chilis, salt and msg in a mortar.
2. Using the pestle, crush the ingredients until a rough paste forms.
3. Next add in 4 ½ cups fish sauce, sugar and key lime concentrate. Mix until well combined.
4. Adjust taste with sugar or fish sauce.
5. Stir in chopped cilantro.
