Key Lime Scallop Ceviche3 pints |
• | 1 cup The Perfect Purée Key Lime Concentrate, thawed |
• | 1/2 tsp. garlic, minced |
• | 1 red onion, medium size, small dice |
• | 1 red pepper, small dice |
• | 1/2 cucumber, small dice |
• | 1 jalapeno, minced |
• | 2 vine ripened tomato, medium size, small dice |
• | 1 cup cilantro leaves, chopped |
• | 2 tsp. salt |
• | 1 lb. sea or bay scallops, sliced 1/4 inch |
Method: | |
1. | Combine all above ingredients in a bowl and let marinate for one hour. |
2. | Serve in Bibb lettuce leaves or with crisp tortillas. |
