Ingredients for La Pera:

  • 1 ½ oz tequila (reposado recommended)
  • ½ oz St. Elizabeth’s Allspice Dram
  • 1 oz fresh lime juice
  • 1 oz sage agave syrup
  • 2 dashes Angostura Bitters

Ingredients for Sage Agave Syrup:

Method for La Pera:

  • Rim a double rocks glass with cinnamon, salt and sugar mix. Fill with fresh ice.
  • Combine ingredients, shake and pour into glass.
  • Garnish with pear slice poached in a pea flower simple syrup, sliced and dehydrated.

Method for Sage Agave Syrup:

  1. Combine sage and agave in small saucepan. Bring to a boil and simmer briefly.
  2. Remove from heat. Take sage leaves out of the mixture, add Pear puree and blend.
  3. Cool and strain.
