Lime Shortbread CookiesThe Perfect Purée |
Ingredients: | |||
• | 1 tsp. The Perfect Purée Key Lime Concentrate, thawed | ||
• | 1 tsp. The Perfect Purée Lime Zest, thawed | ||
• | 1/4 cup unsalted butter softened | ||
• | 1/4 cup coconut oil solid | ||
• | 1 cup brown sugar | ||
• | 1 large egg yolk | ||
• | 1 cup All-Purpose Flour | ||
• | 1/2 teaspoon baking powder | ||
Method: | |||
1. | In a mixer or large bowl, cream together butter, solid coconut oil, and sugar until well combined. Add the egg yolk and mix until well combined. Add the flour, baking powder, lime juice, and lime zest to the same bowl and mix until a dough forms. | ||
2. | Transfer dough to a work surface and shape into a smooth log. Wrap in plastic wrap and chill for at least 2 hours or overnight. | ||
3. | Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside. | ||
4. | Remove logs from the fridge. Slice into 12 evenly thick cookies and place on the baking sheet. | ||
5. | Bake the cookies for 15-20 minutes or until brown around the edges. Allow to cool completely before serving. | ||
6. | Optional: Top with lime zest glaze. |
