Nick Crutchfield, Bar Manager, Commonwealth Restaurant and Skybar, Charlottesville, VA

    • 2 oz. Tanqueray London Dry Gin
    • 1 1/2 oz. The Perfect Purée Thyme & Citrus,  thawed
    • 1 oz. lemon juice
    • 2 dashes of Bitterman’s Orchard Street Shrub
    • 2 dashes of Bitterman’s Boston Bittahs
    • Sparkling water
    • Edible pansy (for garnish)
1. Combine all liquid ingredients except sparkling water into a cocktail shaker with ice and shake vigorously until thoroughly combined. Strain into an iced 10 oz. Collins glass. Top with sparkling water. Garnish with an edible pansy.
