| • | 1 tsp. The Perfect Purée Orange Zest, thawed |
| • | 1 oz. fresh lime juice |
| • | 3 dashes of Angostura bitters |
| • | 1 egg white |
| • | Rosemary sprig |

| In a shaker without ice, combine Mezcal, lime juice, orange zest, and egg white. Shake for 7-10 seconds. Add ice and shake for 30 seconds. Strain and serve in a chilled glass. Garnish with Angostura bitters and rosemary sprig. | |
