Ingredients:
- 1 1/2 oz. Etsu Japanese Gin
- 1/2 oz. Kiwi-infused Agwa Liqueur
- 1/2 oz. Passion Fruit Syrup
- 1/4 oz. Rich simple syrup
- 1/4 oz. Lemon juice
- 1/4 oz. Lime juice
- Cava
Method:
- In a cocktail shaker, combine all ingredients, minus cava. Shake, strain, and serve in a coupe glass. Top with cava and garnish with a kiwi slice.
Ingredients for the Passion Fruit Syrup:
- 993 g. The Perfect Purée Passion Fruit Concentrate, thawed
- 750 g. sugar
Method for the Passion Fruit Syrup:
- Combine all ingredients in a bowl. Use an immersion blender to combine.
