Pear Collins

1 drink

    • 1 1/2 oz. Bluecoat Gin or Grey Goose la Poire Vodka
    • 1 1/2 oz. The Perfect Purée Pear Puree,  thawed
    • 3/4 oz. simple syrup
    • 3/4 oz. fresh lemon juice
    • champagne
    • pear slice (for garnish)
1. Combine ingredients except champagne and garnish into a mixing glass with ice. Shake with a Boston Shaker and strain into a highball glass. Top with champagne and garnish with a pear slice.
