Plum Gochu Mignonette

Ingredients for Plum Gochu Mignonette:
• ¼ cup white wine vinegar
• 1–2 tbsp. finely diced shallots
• ½ tsp. black cracked pepper
• 1–1 ½ tbsp. The Perfect Purée Plum Gochu Syrup (depending on taste preference)
• Korean Chili flakes for garnish
• small diced chives for garnish

Method for Plum Gochu Mignonette:
Combine all ingredients. Shuck fresh oysters. Place oysters on ice and drizzle mignonette over each oyster.
