| • | 1 1/2 oz. Waterloo No.9 Gin | 
| • | 3/4 oz. St. George Spiced Pear | 
| • | 3/4 oz. The Perfect Purée Pear Puree, thawed | 
| • | 1/2 oz. lemon | 
| • | 1/2 oz. simple syrup | 
| • | 1 egg white | 
| • | Dehydrated strawberry powder | 
| • | 2 drops of Peychauds Bitters | 
| Method: | |
| Add all ingredients to a shaker tin and dry shake and then wet shake. Double strain into a chilled coupe and sprinkle dehydrated strawberry powder and 2 drops of Peychauds with a line through it. | |
