    • 1 1/2 oz. Waterloo No.9 Gin
    • 3/4 oz. St. George Spiced Pear
    • 3/4 oz. The Perfect Purée Pear Puree, thawed
    • 1/2 oz. lemon
    • 1/2 oz. simple syrup
    • 1 egg white
    • Dehydrated strawberry powder
    • 2 drops of Peychauds Bitters
Method:
Add all ingredients to a shaker tin and dry shake and then wet shake. Double strain into a chilled coupe and sprinkle dehydrated strawberry powder and 2 drops of Peychauds with a line through it.
