Red Jalapeño Mango Ceviche

2 oz. The Perfect Purée Red Jalapeño Puree, thawed
White fish, rock shrimp or langostino
2 oz. fresh lime juice, no seeds
1 mango, medium diced
1 bunch cilantro, medium chopped
1 tomato, medium diced
1 cucumber, medium diced with seeds removed
1/2 red onion, chiffonade (strips)
1 tsp. chipotle sauce
Salt
Method:
1. Marinate white fish in lime juice.
2. Combine mango, cilantro, tomato, cucumber, red onion together and add to white fish in lime juice.
3. Combine all ingredients with The Perfect Purée Red Jalapeño Puree, fresh lime juice, chipotle sauce and season to taste.
4. Serve immediately.
