| • | 2 oz. The Perfect Purée Red Jalapeño Puree, thawed |
| • | White fish, rock shrimp or langostino |
| • | 2 oz. fresh lime juice, no seeds |
| • | 1 mango, medium diced |
| • | 1 bunch cilantro, medium chopped |
| • | 1 tomato, medium diced |
| • | 1 cucumber, medium diced with seeds removed |
| • | 1/2 red onion, chiffonade (strips) |
| • | 1 tsp. chipotle sauce |
| • | Salt |

| Method: |
| 1. | Marinate white fish in lime juice. |
| 2. | Combine mango, cilantro, tomato, cucumber, red onion together and add to white fish in lime juice. |
| 3. | Combine all ingredients with The Perfect Purée Red Jalapeño Puree, fresh lime juice, chipotle sauce and season to taste. |
| 4. | Serve immediately. |
