Red Raspberry Poached Pears

 • 8 oz. The Perfect Purée Red Raspberry Puree, thawed
    • 2 oz. Framboise or raspberry liqueur
    • 1 tsp. sugar
    • 4 firm-ripe pears
    • 2 tbsp. finely chopped raw pistachio nuts
Method:
1. In a bowl stir together Red Raspberry puree, liqueur, and sugar; set aside.
2. Peel pears. Core pears from the bottom, leaving the stem intact. Cut a thin slice from the bottom of each pear so pears stand upright. Arrange pears standing upright in a large saucepan; pour raspberry mixture over pears.
3. Bring pear mixture to boiling; reduce heat. Simmer, covered, for 10 to 15 minutes, or until pears are tender. Remove pears to a platter; cover and chill.
4. Transfer cooking liquid to a smaller saucepan; boil until thickened, about 10 to 12 minutes. Cool.
Serving Suggestion:
Spoon some of the sauce on each dessert plate; place pears upright on sauce. Drizzle additional sauce over each pear and sprinkle with pistachio nuts.
Flavor Twists:
You can make the sauce and poaching liquid with Strawberry, Blackberry, Apricot, or White Peach.
