Soursop Curry Sauce

Ingredients for Soursop Curry Sauce:
• 1 cup The Perfect Purée Soursop Puree, thawed
• 1 cup coconut milk
• 1 yellow onion, medium dice
• 4 Thai green chilis
• 1 tbsp. allspice
• 2 bay leaves
• 1 tsp. chili powder
• 1 tsp. coriander powder
• ¼ tsp. turmeric powder
• ¼ tsp. black pepper
• 2 tbsp. ghee
• salt to taste

Method for Soursop Curry Sauce:
1. Place ghee in a wok or pot and bring heat to medium to high heat.
2. Add all spices (allspice, bay leaves, chili powder, coriander powder, turmeric powder and black pepper). There should be a sizzle when added to the heated ghee. Sauté to allow spices to cook and release aromas.
3. Add onions and Thai green chilis – sauteed until they start to soften.
4. Add Soursop until heated through.
5. Slowly add the coconut milk and temper to avoid the milk curdling.
6. Salt to taste.
7. Optional – Add protein or other vegetables of choice to the sauce.
