Strawberry Kiwi Soup

30 minutes, plus 24 hours standing

    • 16 oz. The Perfect Purée Strawberry Puree, thawed
    • 16 oz. The Perfect Purée Kiwi Puree, thawed
   • 4 oz. sour cream
    • 4 oz. whipping cream
    • 8 oz. dry white table wine
    • 1 cup sifted confectioner’s sugar
1. In a bowl stir together sour cream and whipping cream. Cover and chill in refrigerator for 24 hours to make creme fraiche.
2. In a large saucepot stir together Strawberry puree, Kiwi puree, wine, and sugar. Bring mixture to boiling; remove from heat and cool completely.
3. Transfer cooled puree mixture to a large mixing bowl; fold in creme fraiche. Cover and chill in refrigerator until serving time. Serve chilled.
Serving Suggestion:
Garnish each serving of this dessert soup with a drizzle of heavy cream and sliced fresh strawberries with half-slices of kiwi fruit. Accompany the soup with thin butter cookies or chocolate wafers.
