    • 1.5 oz Reyka vodka
    • 0.25 oz The Perfect Purée Passion Fruit Concentrate, thawed
    • 0.5 Fresh lime juice
    • 1.5 oz House made ginger beer (recipe below)
    • sprig of mint (garnish)
Ginger Beer:
    • 1 lb. whole ginger
    • 2 qt. water
    • 1 qt. white sugar
    • 8 oz. lime juice
    • 1-2 finely diced hot peppers
    • 1 oz. turmeric
    • 1 tbsp.  dry yeast

1. Ginger beer: Grate/shave/process whole ginger. Do not peel first. Add processed ginger to 2 quarts water. Bring ginger/water to a boil, then reduce heat to lowest setting. Stir in white sugar, lime juice, 1-2 finely diced hot peppers,and turmeric. Once mixture is even, remove from heat. Allow to cool for 3 minutes before adding 1 tablespoon of dry yeast. (Skip this step if you do not want it to ferment and use your ginger beer for mocktails) Before serving it, make sure you strain it first! Also, beware of leaving either the hot peppers or the yeast sitting too long.Topped up with seltzer water.

Add all the ingredients in the shaker tin and shake hard. Strain into a crystal Collins glass over big rocks and topped up with seltzer water.
