Life of Bellini (IG: lifeofbellini)

    • 1 1/2 oz. Cachaça Leblon
    • 1 1/2 oz. El Dorado Demerara Rums
    • 2 oz. The Perfect Purée Passion Fruit Concentrate, thawed
    • 3/4 oz. Galapagos Coffee & Mint Syrup
    • 1/2 oz. fresh lime juice
Add all ingredients and two-thirds fill glass with crushed ice. Swizzle vigorously with a swizzle stick (or bar spoon) until frothing. Fill glass with more crushed ice
Garnish with fresh passion fruit, Kaffir lime and mint spring.
For the Galapagos Coffee & Mint Syrup:
    • 1 oz. raw cane sugar
    • 1 oz. Nespresso Galapagos coffee, or full-bodied espresso
    • 1 tbsp. vanilla extract
    • 1 kaffir mint leaf
    • 8 mint sprigs
Method for the Galapagos Coffee & Mint Syrup:
Combine all ingredients in a pot and heat. Remove from heat once boiling. Let cool before serving.
